Strawberry, Spinach, & Feta Salad
Ingredients
- Head of Romaine Lettuce 
- Clean Baby Spinach (preference to remove stems) 
- Cucumber 
- Red Onion 
- Strawberries 
- Candied Pecans (recipe below) 
- Craisins (for topping) 
- Crumbled Feta Cheese (for topping) 
Candied Pecan Recipe
- ½ c. - Brown Sugar 
- ¼ tsp. - Salt 
- ¼ tsp. - Ground Cinnamon 
- 1 tbsp. - Water 
- 1 tbsp. - Butter 
- 1c. - Raw Pecans Halved or Pieces 
- Mix Together all ingredients EXCEPT the pecans below in small skillet over medium heat until the brown sugar gets bubbly 
- Add in the Pecans and coat them well with sauce and stir frequently 
- Place on parchment paper to cool 
Salad Recipe
- Clean and chop the Romaine 
- Clean the baby spinach - preferably removing the stems 
- Slice and quarter the cucumber 
- Slice and quarter the red onion 
- Remove the stems, clean, and slice the strawberries 
- Put all the ingredients into a bowl and mix 
- Plate the salads and add the pecans, craisins, and crumbled feta toppings 
- Drizzle your favorite vinaigrette dressing - MC’s recommendation is Raspberry Vinaigrette Dressing!
