Strawberry, Spinach, & Feta Salad
Ingredients
Head of Romaine Lettuce
Clean Baby Spinach (preference to remove stems)
Cucumber
Red Onion
Strawberries
Candied Pecans (recipe below)
Craisins (for topping)
Crumbled Feta Cheese (for topping)
Candied Pecan Recipe
½ c. - Brown Sugar
¼ tsp. - Salt
¼ tsp. - Ground Cinnamon
1 tbsp. - Water
1 tbsp. - Butter
1c. - Raw Pecans Halved or Pieces
Mix Together all ingredients EXCEPT the pecans below in small skillet over medium heat until the brown sugar gets bubbly
Add in the Pecans and coat them well with sauce and stir frequently
Place on parchment paper to cool
Salad Recipe
Clean and chop the Romaine
Clean the baby spinach - preferably removing the stems
Slice and quarter the cucumber
Slice and quarter the red onion
Remove the stems, clean, and slice the strawberries
Put all the ingredients into a bowl and mix
Plate the salads and add the pecans, craisins, and crumbled feta toppings
Drizzle your favorite vinaigrette dressing - MC’s recommendation is Raspberry Vinaigrette Dressing!
